Quarantine Recipes: Eggplant Parmesan
We’ve covered several other recipes in our blog so far since the beginning of the covid crisis. We have another delicious one for you this week. Eggplant Parmesan is the alternate and healthier version of chicken parmesan. The ingredient list is simple and it’s pretty easy to make as well.
- 2 pounds eggplant, 1 large or 2 medium
- olive oil spray
- 1 teaspoon kosher salt
- 12 ounces part-skim ricotta
- 1/4 cup + 2 tbsp Romano
- 1/4 cup fresh parsley, chopped
- 1 large egg
- 2-1/2 cups mozzarella
- 4 cups homemade tomato sauce or jarred marinara
